Media tastings are not reviews, but they are a great way for me to learn more about full menu offerings, dish updates, and special events from our local restaurants to share with readers. Media tasting invitations are accepted from any local restaurant who would like coverage on Feasting Fort Collins – no matter if they’ve been previously reviewed or not.

Grimaldi’s is one of the many (many) pizzerias that have established themselves in the Fort Collins dining scene at the Foothills Mall, who created an outdoor courtyard of chain restaurants. While the community at large has been questioning the reason for the mall being mostly dining options over retail, and I agree, I do have to honestly say that I’ve occasionally popped into these restaurants for a happy hour or dinner before hitting a movie. Mostly because the theater is grossly overpriced when it comes to food and beverage options. I’ll just enjoy that in a regular dining atmosphere, thanks!
I was invited to stop by Grimaldi’s with the family for a media tasting. It was not my first time there. And, if you know me well, you know that pizza is not exactly my first dining choice in this city. But, the family was super excited about it. And they had wine. Exclusive wine only available at Grimaldi’s, so that was something to really look forward to.
They do well on the family-friendliness of the place. The kids got to watch the pizzas being made as we were seated right next to the kitchen with optimal views, and they were given pizza dough to play with, like playdough. This was the highlight of their night and provided an evening of entertainment for them as they made pizza beards and moustaches.
As most media tasting go, we went through a large portion of the menu – appetizers, pizzas, wine, and desserts. And as media tastings go, this is not a review. So feel free to go through the photos in the gallery to take a gander at the dishes. But I can say, The Don was a big hit with the whole family. Those meatballs were pretty tasty.

Caprese – slices of fresh mozzarella, tomatoes and fresh basil, drizzled with extra virgin olive oil
Bruschetta Trio – classic tomato and basil, marinated artichoke, and olive medley
Buffalo Chicken Pizza – coal brick-oven pizza crust topped with fire-braised chicken breast, spicy Frank’s RedHot sauce, mozzarella, gorgonzola crumbles and celery
The Don – traditional pizza topped with Italian sausage, meatballs and pepperoni
Margherita – traditional pizza with extra famous sauce and fresh basil
Wine – Mille Gradi Rosso Toscano, their exclusive wine
Tiramisu – espresso soaked ladyfingers, layered with sweet mascarpone. Finished with a dusting of cocoa powder
Dessert Trio – Chocolate cheesecake, classic cheesecake, oreo cookie cheesecake
