Media tastings are not reviews, but they are a great way for me to learn more about full menu offerings, dish updates, and special events from our local restaurants to share with readers. At this point, media tasting invitations are being accepted from any local restaurant who would like coverage on Feasting Fort Collins – no matter if they’ve been previously reviewed or not.

Most of my favorite dining experiences in Fort Collins are pairing dinners. It doesn’t matter if it’s a beer pairing dinner, a wine pairing, or a cocktail pairing (well, cocktail pairings are my absolute favorite if I’m being totally honest), but either way, they are magical dining experiences. Everyone is happy and friendly, there’s a palpable excitable energy flowing through the room, the chef’s are stoked to showcase their creativity, the drinks flow easily… it’s just an amazing way to dine in Fort Collins.
Locality just started their (hopefully) monthly wine pairing events last week. The first pairing dinner featured Gonnet Winery from Southern Rhone, and included special guest Kelly Gonnet from the winery. Now, you don’t have to be a wine geek (or beer geek) to thoroughly appreciate a pairing event. Most likely you’ll be seated next to a geek who will be more than happy to share their vast knowledge of pairings with you, and without judgement. Somehow we’ve been seated with people who work at Wilbur’s in the last few pairing dinners we’ve gone to. I know pairings, and I know my alcohol, but buyers at liquor stores have a wealth of information that’s really fun to tap into. It makes for great table conversation.

First course – Socca “nicoise” with pea pesto, arugula, foraged greens, hard boiled Jodar egg, confit olives and tomato, paired with 2015 La Font du Vent Les Promesses CDR Blanc
Second course – Bouillabaisse fish stew with Colorado Bass, clam, mussels, and toasted bread with rouille, paired with 2015 La Font du Vent Confidentia CDR Rouge
Third course – Motherlove Farm’s roasted lamb cassoulet with white beans, chorizo, and herbed bread crumbs paired with 2015 Domaine Font de Michelle Chateauneuf-du-Pape Cuvée
Fourth course – pistachio-crusted Broken Shovel’s goat cheese and poached pears paired with 2012 Domaine Font de Michelle Cuvée Etienne Gonnet Chateauneuf-du-Pape
Fifth course – chocolate-fig esterel cake with Cointreau chantilly and shaved chocolate paired with 2015 La Jeannette Cote de Ventoux
