One of the questions I’m asked most is, “what is your favorite restaurant in Fort Collins?” Over the years it has become easy for me to make that decision with a solid reason as to why, but it’s also difficult for me to just leave it at that. Usually my response will expand into, “…and then I also really like so and so, and such and such, and this place too. They’re really up there in my list of favorites.”
Cafe Vino is one of those places that always and consistently ends up in my top 3 restaurants in Fort Collins.
Last week during my break I came down from the mountain and got cleaned up to spend Friday going to my kids’ school orientation, be home for our weekly Friday Night Date Night, and lunch with 50 or so lovely local business ladies at Cafe Vino.
I ordered the Shrimp Orzo with roasted tomato, roasted summer squash, crumbled feta, chile oil, herb beurre blanc, and micro spicy mix. Also sipped on a Cojo-Jito mixed with silver rum, Malibu, muddled mint, lime, and coconut water.
It was fabulous – light and flavorful for summer, and just the right portion size for chatting the whole time. The cocktail was also impressive in refreshing flavor and presentation.
Cafe Vino knocks it out of the park with both quality and creativity. They are consistently rotating dishes on their menu to keep it interesting, which is perfect for the people who like to dine there often. That’s what helps to keep me coming back to any bar or restaurant in Fort Collins, because there’s always something new (and delicious) to look forward to eating or drinking.
Because of Cafe Vino’s dedication to keeping the dining spark alive, they make today’s Eat Of The Week.
